Iced Key Lime Shortbread Cookies

Ingredients

Key Lime Shortbread:

  • 2 cups all-purpose flour
  • ¾ cup powdered sugar
  • 2 tablespoons Key lime zest
  • ½ teaspoon salt
  • 1 cup (2 sticks) cold, unsalted butter, cut into 1-inch cubes

Key Lime Icing:

  • 1 ¼ cup powdered sugar
  • 2 tablespoons Key lime juice
  • 1 teaspoon vanilla extract
  • ¼ teaspoon almond extract
  • Key lime zest, for garnish (optional)

Instructions

  1. For the shortbread: In the bowl of a food processor, combine the flour, powdered sugar, lime zest and salt. Pulse until combined, about 15 to 30 seconds. Add the butter and pulse again until dough starts to come together in a ball.
  2. Dust a clean surface with powdered sugar and place the shortbread dough on top. Roll dough into a 14-inch-long log and wrap in plastic wrap. Chill dough in the freezer for 20 minutes.
  3. Meanwhile, preheat oven to 350 degrees and line a baking sheet with parchment paper.
  4. Once dough has chilled, slice the log into ½-inch-thick discs and place on the prepared baking sheet. Bake for 15 minutes or until cookies are slightly browned on the bottom. Transfer cookies to a wire rack to cool while you prepare the icing.
  5. For the icing: In a small bowl, whisk together all icing ingredients until combined. If icing is too runny, add more powdered sugar. If too thick, add more lime juice.
  6. Once cookies have cooled, spoon icing on top of each cookie. Garnish with additional lime zest, if desired, and let icing set before serving.

Tips & Notes

  • Can’t find Key limes? You can substitute regular lime juice and zest.
  • The dough can be made ahead of time and chilled in the refrigerator for up to 12 hours before baking.
