Lemon Crinkle Cookies

Crinkle cookies are a classic, but why not trade the traditional chocolate recipe for a bright citrus version? Lemon Crinkle Cookies rolled in powdered sugar offer a fresh pop of flavor to any dessert spread.

Ingredients

  • 1 ¼ cup granulated sugar, divided
  • 1 tablespoon lemon zest
  • ½ cup (1 stick) unsalted butter, melted
  • 2 eggs, room temperature
  • 2 tablespoons lemon juice
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup powdered sugar

Instructions

  1. In a large bowl, whisk together 1 cup granulated sugar with lemon zest for about 30 seconds or until the zest is aromatic.
  2. Add the melted butter, eggs, lemon juice and vanilla and whisk to combine.
  3. Add the flour, baking soda and salt and mix until combined. Cover bowl with plastic wrap and chill dough in the refrigerator for 1 hour.
  4. Preheat oven to 350 degrees and line a baking sheet with parchment paper. Set aside.
  5. Place the remaining ¼ cup granulated sugar on a small plate. Place powdered sugar on a second small plate.
  6. Scoop out a heaping tablespoon of dough and roll into a ball. Roll ball in the granulated sugar first, then generously in the powdered sugar to coat, then place on the prepared baking sheet. Repeat with remaining cookie dough, keeping cookies a few inches apart on the baking sheet.
  7. Bake for 10 to 12 minutes, then transfer cookies to a wire rack to cool before serving.
