Lemon Crinkle Cookies

Ingredients
- 1 ¼ cup granulated sugar, divided
- 1 tablespoon lemon zest
- ½ cup (1 stick) unsalted butter, melted
- 2 eggs, room temperature
- 2 tablespoons lemon juice
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup powdered sugar
Instructions
- In a large bowl, whisk together 1 cup granulated sugar with lemon zest for about 30 seconds or until the zest is aromatic.
- Add the melted butter, eggs, lemon juice and vanilla and whisk to combine.
- Add the flour, baking soda and salt and mix until combined. Cover bowl with plastic wrap and chill dough in the refrigerator for 1 hour.
- Preheat oven to 350 degrees and line a baking sheet with parchment paper. Set aside.
- Place the remaining ¼ cup granulated sugar on a small plate. Place powdered sugar on a second small plate.
- Scoop out a heaping tablespoon of dough and roll into a ball. Roll ball in the granulated sugar first, then generously in the powdered sugar to coat, then place on the prepared baking sheet. Repeat with remaining cookie dough, keeping cookies a few inches apart on the baking sheet.
- Bake for 10 to 12 minutes, then transfer cookies to a wire rack to cool before serving.
