Ingredients
- 3 pounds beef brisket
- 2 ½ teaspoons salt, divided
- 2 tablespoons olive oil
- ½ cup beef broth
- 4 chipotle peppers in adobo sauce
- 1 can (4 ounces) green chiles
- 3 cloves garlic
- ½ cup fresh cilantro, packed
- 2 tablespoons apple cider vinegar
- 2 tablespoons honey
- 1 teaspoon dried oregano
- ½ teaspoon ground cumin
- Corn or flour tortillas, for serving
- Fresh lime juice, for serving (optional)
Instructions
- Pat brisket dry with a paper towel and sprinkle 2 teaspoons of salt over both sides.
- Heat a large skillet over medium-high and add oil. Once oil is hot, sear brisket for 2 to 3 minutes on each side. Remove from skillet and transfer to a slow cooker.
- In a blender or food processor, combine the broth, peppers, chiles, garlic, cilantro, vinegar, honey, oregano, cumin and remaining ½ teaspoon salt. Blend until smooth. Pour the mixture into the slow cooker over the meat.
- Cover the slow cooker and cook on high for 5 to 6 hours, or until meat is tender.
- Remove the brisket from the slow cooker and chop. Return to the slow cooker and stir to combine with the liquid. Serve meat on corn or flour tortillas with a squeeze of fresh lime juice, if desired.
Tips & Notes
If you are sensitive to spice, you can reduce the number of chipotle peppers to 2.
