Slow Cooker Beef Barbacoa Tacos

Ingredients

  • 3 pounds beef brisket
  • 2 ½ teaspoons salt, divided
  • 2 tablespoons olive oil
  • ½ cup beef broth
  • 4 chipotle peppers in adobo sauce
  • 1 can (4 ounces) green chiles
  • 3 cloves garlic
  • ½ cup fresh cilantro, packed
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 1 teaspoon dried oregano
  • ½ teaspoon ground cumin
  • Corn or flour tortillas, for serving
  • Fresh lime juice, for serving (optional)

Instructions

  1. Pat brisket dry with a paper towel and sprinkle 2 teaspoons of salt over both sides.
  2. Heat a large skillet over medium-high and add oil. Once oil is hot, sear brisket for 2 to 3 minutes on each side. Remove from skillet and transfer to a slow cooker.
  3. In a blender or food processor, combine the broth, peppers, chiles, garlic, cilantro, vinegar, honey, oregano, cumin and remaining ½ teaspoon salt. Blend until smooth. Pour the mixture into the slow cooker over the meat.
  4. Cover the slow cooker and cook on high for 5 to 6 hours, or until meat is tender.
  5. Remove the brisket from the slow cooker and chop. Return to the slow cooker and stir to combine with the liquid. Serve meat on corn or flour tortillas with a squeeze of fresh lime juice, if desired.

Tips & Notes

If you are sensitive to spice, you can reduce the number of chipotle peppers to 2.
