Ingredients
- 1 cup white rice, uncooked
- 5 cups broccoli florets
- ½ cup bone broth
- ⅓ cup fresh orange juice (about 1 orange)
- 2 tablespoons orange marmalade
- 2 tablespoons low-sodium soy sauce or tamari
- 1 tablespoon rice vinegar
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 teaspoon sesame oil
- 4 tablespoons cornstarch, divided
- 1-1 ½ pounds boneless, skinless chicken breast or thighs, cut into bite-sized pieces
- Salt, to taste
- Pepper, to taste
- 3 tablespoons olive oil
- 1 teaspoon sesame seeds, plus more for garnish
- 1 green onion, chopped
Instructions
- In a large saucepan, combine the rice with 2 cups water. Cook rice according to package directions.
- While rice is cooking, fill a pot with 2 inches of water and place a steamer basket inside. Place broccoli inside the steamer basket and bring water to a boil over high heat. Reduce heat to medium, cover pot, and steam broccoli for about 5 minutes, or until tender and bright green.
- In a small bowl, whisk together the broth, orange juice, marmalade, soy sauce, vinegar, garlic, ginger, sesame oil and 1 tablespoon cornstarch. Set aside.
- Season chicken with salt and pepper and sprinkle with remaining 3 tablespoons cornstarch. Toss to evenly coat.
- Heat olive oil in a large skillet over medium heat. Add the chicken and cook, stirring occasionally, until golden brown, about 8 minutes. (Depending on the size of your pan, you may need to work in batches.)
- Add the broth mixture to the skillet with the chicken and stir until thickened, then stir in the sesame seeds.
- Divide rice between 4 serving bowls. Top each serving with chicken and broccoli. Garnish with green onion and more sesame seeds if desired. Serve immediately.
